Just Playing Along
Chicken Tikka Masala
Ingredients
Marinade
1 cup yogurt
1 tbsp lemon juice
2 tsp ground cumin
1 tsp ground cinnamon
1 tsp cayenne pepper
2 tsp freshly ground black pepper
1 tsp ground ginger
1 tsp salt, or to taste
3 boneless skinless chicken breasts, cut into bite-size pieces
Sauce: (best if recipe is doubled)
1 tbsp butter (or more to thicken)
1 clove garlic, minced
½ jalapeno pepper, finely chopped, seeds removed
2 tsp ground cumin
2 tsp paprika
1 tsp salt, or to taste
1 (8 ounce) can tomato sauce
1 cup whole milk
Directions
In a large bowl, combine yogurt, lemon juice, 2 tsp cumin, cinnamon, cayenne, black pepper, ginger, and 4 tsp salt. Stir in chicken, cover, and refrigerate for 1 hour.
Drain marinade from chicken. On a stovetop, heat chicken until cooked through.
Melt butter in a large heavy skillet over medium heat. Sauté garlic and jalapeno for 1 minute. Season with 2 tsp cumin, paprika, and salt. Stir in tomato sauce and milk. Simmer on low heat until sauce thickens, about 20 minutes. Add chicken, and simmer for 10 minutes. Put on top of basmati rice.

Justin's Freaking Awesome Turkey Chili
INGREDIENTS
2 cups chopped onion
4 garlic cloves, chopped fine or 2 tsp minced garlic
1 chopped green passillo/pobalano pepper
1 chopped green Anaheim chili pepper
1/4 cup olive oil
5 (15 oz) cans stewed tomatoes, crushed
2 (15 oz) mixed Chili Beans
2 Tbsp tomato paste
3/4 cup chicken stock
4 Tbsp of Chili powder
2 Tbsp ground cumin
1 Tbsp dried hot red pepper flakes (2 if you like the heat)
2 teaspoon dried oregano
(optional) 1 Tbsp salt, plus more if desired to taste
1/2 teaspoon black pepper
1 pound 93/7 cooked ground turkey
Cooking Directions
1 In a large, 8-quart, thick-bottom pot, cook the onion and green pepper over medium high heat, stirring, until golden, about 5 minutes. Add the garlic, chili powder, cumin, and red pepper flakes and cook, stirring, for a minute or two more. Add a bit more olive oil if needed.
2 Add tomatoes, tomato paste, stock. beans, oregano, salt, pepper, and cooked turkey meat. Bring mixture to a simmer and reduce heat to low. Simmer, uncovered, for an hour.
3 Salt to taste. Add 1 to 3 teaspoons of sugar to take the edge of the acidity of the tomatoes if desired.
Makes about 12 cups.

also i needed to say that i am loving keane's CDs. i have heard hopes and fears and i already knew about that but matt also has perfect symmetry on our computer and i'm really loving it. i titled this entry "just playing along", because i was listening to it and i just love it so much! also, i just finished reading "beautiful boy" by david scheff. it's really good. it's his memoir and his story about his son's addiction to meth. really good stuff. i knew it would be. i saw it in starbucks this past spring break or the spring break before and i wanted it but i didn't have enough money for it at the time. (it was still in hardback.) so it came out in paperback and i got it. next i am going to read "loose girl, a memoir of promiscuity" by kerry cohen. right now i have a lot of nonfiction to finish up but as soon as i have one or two of those books out of the way, i'm reading it.
well, i have a lot more to get done today, so i better be done blogging for today. hopefully i'll update more this week! weee!

first day of fall!
so this morning i made pumpkin pudding in honor of the first day of fall.
pumpkin pudding
ingredients
1 large package vanilla pudding
2 1/2 cups milk (or the amount required to make the pudding)
1- 8 oz container cool whip
1- 15 oz can of pure pumpkin
pumpkin pie spice (optional)
directions
mix it all together! it would be best to mix the pudding mix and milk first, so that you get all the lumps out, then with a wooden spoon mix the rest in. if you use "light", "sugar free", or "fat free" for any of these ingredients, you will decrease the calories quite a bit. so that's another reason this recipe rocks.
tonight amanda is coming over and we are going to have a fall festival with pumpkin pudding and chili. yummmy! maybe we can watch biggest loser, also.

Mexican RiceIngredients:3 tablespoons vegfetable oil1 cup uncooked long-grain rice (i used brown instant rice)1 teaspoon garlic salt1/2 teaspoon ground cumin1/2 cup chopped onion1/2 chopped green bell pepper1/2 cup tomato sauce2 cups chicken broth (i used the make it yourself kind)1-2 tbsp chili powderDirections:1. Heat oil in a large saucepan over medium heat and add rice. Cook, stirring constantly, until puffed and golden. While rice is cooking, sprinkle with salt and cumin.2. Stir in onions and cook until tender. Stir in tomato sauce and chicken broth: bring to a boil. Reduce heat to low, cover and simmer for 20 to 25 minutes. Fluff with a fork.Amazing TacosIngredients:2 pounds pork shoulder roast (or beef roast, whatever you have)*-[for more flavorful meat, double the following ingredients, except salt]-*1 (4 ounce) can diced green chilies, drained2 tablespoons chili powder1/2 teaspoon dried oregano1/2 teaspoon taco seasoning1 teaspoon minced garlic3/4 teaspoon salt, or to tasteDirections from the recipe:1. Preheat the oven to 300 degrees F.2. Place the roast on top of a large piece of aluminum foil. In a small bowl, stir together the green chilies, chili powder, oregano, taco seasoning, and garlic. Rub onto the roast. Wrap foil around the roast so that it is completely covered, using additional aluminum foil if necessary. Place on top of a roasting rack in a baking dish, or place a cookie sheet on an oven rack below to catch any leaks.3. Roast meat for 3 1/2 to 4 hours in the preheated oven, until falling apart. Remove from the oven and shred into small pieces using two forks. Season with salt to taste.What we did:1. Put the roast into your crock pot and turn it on to cook on low for 8-10 hours... or however long before you're going to eat.2. In a small bowl, stir together the green chilies, chili powder, oregano, taco seasoning, and garlic. Rub onto the roast.3. When you're ready to eat (the meat will be done if you let it go the whole time in the crock pot, even if you do it on high for 4-6 hours), pull it apart with two forks!These are so good!

Increase speed to high; beat until frosting is light and fluffing and an easy spreading consistency. Then eat and enjoy!

Chocolate Brownie CupcakesIngredients:3/4 cup semisweet chocolate chips (i used milk chocolate, because it's what we had)1/2 cup (1 stick) sweet butter (we didn't use sweet butter, we didn't have it)2 eggs1 1/2 cups superfine sugar (i used regular sugar)1 tsp vanilla extract1 cup all- purpose flourpreheat the oven to 325 degrees F. Place 12 paper baking cups in a muffin pan. Melt the chocolate and butter in a double boiler or medium bowl set over a pan of simmering water, stirring until melted. (i just put it in a microwave safe bowl, put it in for 30 seconds, stirred, another 30 seconds, stirred, until smooth). set aside to cool. in a medium bowl, beat the eggs, sugar, and vanilla until pale and thick. fold in the chocolate and then the flour, mixing until well combined.spoon batter into cups. bake for 25 minutes. remove pan from oven and cool for 5 minutes. then remove cupcakes and cool on a rack.you may serve it with vanilla cream topping, but i did not think that was necessary. however...Ingredients:1 cup heavy cream1 tsp vanilla extract3 tbsp confectioners' sugar, siftedFor the topping, beat the cream in a medium bowl until semi-stiff. fold in the vanilla and confectioners' sugar. place a dollop or two on each brownie.store without topping in an airtight container for up to 2 days.makes 1 dozen.

CHICKEN AND DUMPLINGSprep time: 20 minutesstart to finish: 3 hours 5 minutes (let's try 4 and a half hours, people!)4 servings (i couldn't believe this. there is soooo much!!)Ingredients:-1 cut-up whole chicken (3 to 3 1/2 pounds) or chicken pieces with bones-2 medium stalks celery, with leaves, cut up-2 medium carrots, sliced-1 small onion (well, we used 1/2)-1 tbsp chopped fresh parsley or 2 tsp parsley flakes-1 tsp salt-1/8 tsp pepper-5 cups water-2 1/2 cups original bisquick mix-2/3 cup milkDirections:1. remove and discard excess fat and guts from chicken. you want to keep the bones in for now because you are making a chicken stock. in 4-quart dutch oven (or a large pot, like we used), place chicken, celery, carrot, onion, parsley, salt, pepper and water. cover and heat to boiling; reduce heat. simmer about 2 hours or until juice of chicken is clear when thickest part is cut to bone (170*F for breasts; 180*F for thighs and legs).2. remove chicken and vegetables from pot. remove bones from chicken. it's difficult to get every single bone, so when you are eating, be careful. skim 1/2 cup fat from broth if you can get that much. reserve. transfer broth to large bowl; reserve 4 cups (you can reserve the remaining broth for another use)3. in dutch oven, heat reserved 1/2 cup fat, or butter, over low heat. stir in 1/2 cup of the bisquick mix. cook, stirring constantly, until mixture is smooth and bubbly; remove from heat. stir in reserved 4 cups broth. heat to boiling, stirring constantly. boil and stir 1 minute. add chicken and vegetables; reduce heat to low. heat about 20 minutes or until hot. during this time, i tried to shred the chicken to smaller pieces.4. in medium bowl, stir remaining 2 cups bisquick and themilk with wire whisk or fork until soft dough forms. drop dough by spoonfuls onto hot chicken mixture. do not drop directly into the liquid. cook uncovered over low heat 10 minutes. cover and cook 10 minutes longer... well, it actually took us about 30 minutes, and we had to flip the dumplings over eventually. just watch them, because you want the dough to be cooked, not raw, but it's ok if it gets soggy.

Tres Leches (Milk Cake)Ingredients:1 1/2 cups all-purpose flour1 tsp baking powder1/2 cup unsalted butter1 cup white sugar5 eggs1/2 tsp vanilla extract2 cups whole milk1 (14 ounce) can sweetened condensed milk1 (12 fluid ounce) can evaporated milk1 1/2 cups heavy whipping cream1 cup white sugar1 tsp vanilla extractDirections:1. preheat oven to 350 degrees F. Grease and flour one 9X13 inch baking pan. You need a larger pan, because the milks will be poured in later, and you don't want it to overflow.2. sift flour and baking powder together and set aside.3. cream butter or margarine and the 1 cup sugar together until fluffy. add eggs and the 1/2 tsp vanilla extract; beat well.4. add the flour mixture to the butter mixture 2 tbsp at a time; mix until well blended. pour batter into prepared pan.5. baking at 350 degrees F for 30 minutes. pierce cake several times with a fork when it is done. let the cake cool completely.6. combine the whole milk, condensed milk, and evaporated milk together. pour over the top of the cooled cake. place in refrigerator.7. whip whipping cream, the remaining 1 cup of sugar, and the remaining 1 tsp vanilla together until thick and soft peaks form. spread over the top of cake. be sure and keep cake refrigerated, because like i said, it is best served cold. mmm.
i'll do my best to explain it. so everyone sits in a circle, and i'm going to pretend there are 12 people playing. so each person needs 12 pieces of paper, and on the first page, at the top, write your name very small. this is your stack. each person writes a phrase on that piece of paper. any phrase- from "disney world" to "the night has eyes" to "michael jordan flies over the moon on his unicorn" to "chuppacabra". when everyone has their phrase, pass your stacks of paper to the left. now you have a new stack of paper. read the phrase, put that paper at the back of the stack, and draw a picture to go along with the phrase. when everyone is done with their picture, pass the stack to the left. (you can be passing to the right, but pass to the right the whole game.) now you have a new stack of paper. look at the picture, put that paper at the back of the stack, and now write a phrase to go along with the picture. when everyone is done, pass the stacks to the left. continue with this pattern until you wind up with your stack of paper. however, before you give the original stacks back to the original people, put your last thing at the back so that they see their phrase to begin with. don't look at what everyone did yet! each person shares with the group, and that should be the first time you see what is in your stack- when you are sharing it with the group. it is so fun and you will laugh your behind off.
Lemon Blossoms by Paula DeenIngredients:-18 1/2 ounce package yellow cake mix-1 1/2 ounce package instant lemon pudding mix-4 large eggs-3/4 cup vegetable oilGlaze:-4 cups confectioners' sugar-1/3 cup fresh lemon juice (i just used it from the bottle)-1 lemon, zested-3 tbsp vegetable oil-3 tbsp waterDirections:preheat oven to 350 degrees F.spray mini muffin tins with vegetable oil cooking spray. combine the cake mix, pudding mix, eggs and oil and blend well with an electric mixer until smooth, about 2 minutes. pour a small amount of batter, filling each muffin tin half way. bake for 12 minutes. turn out into a tea towel.to make the glaze, sift the sugar into a mixing bowl. add the lemon juice, zest, oil, and 3 tbsp water. mix with a spoon until smooth.with fingers (or a fork, piercing the bottom of the cakes, not the top so they can still look pretty!), dip the cupcakes into the glaze while they are still warm (i waited until they cooled a bit), covering as much of the cake as possible, or spoon the glaze over the warm cupcakes, turning them to completely coat. place on wire racks with wax paper or foil underneath to catch any drips (and there will be a lot!). let the glaze set thoroughly, about 1 hour, before storing in containers with tight-fitting lids.deliciousness in your mouth!

no name
-i feel like i am wasting money. i paid for my degree; i paid for my two certifications; i paid for a bunch of teaching materials i was trying to collect before i got a job so that once i got one, spending wouldn't be so crazy.-i am wasting my passion and talent.-in a year, i will have to go through all of this again, because your applications are only good for a year, and obviously principals won't keep your emails from the year before. looking for a job super sucks, but knowing it's going to happen again in a set timeline really stinks.-in a year, if i even get interviews, principals will wonder why i didn't have a job this year. what was wrong with me? and i'll have to answer, "it was the economy." i HATE the word economy and i hate that excuse. i am so tired of it. it all started with greed in the first place.-i know God gave me this passion and talent, and He has a plan for me. if he clothes the wheat and feeds the birds, He's going to take care of me in this. even though i know this and i remind myself of this, and He reminds me, it's still hard to trust Him. i know what i want, but obviously it isn't what He wants for me.-subbing is the only other option that makes sense, because at least i will be in a public school environment. at least i would be teaching, and sometimes i'll get to teach kids i know! however, this is a huge blow to my ego. i am way qualified, passionate, talented, and connectable with the kids, but i have to stoop to filling in for the other teachers. most of the time they won't even give me real lesson plans. however, God doesn't care about my ego. if anything, He wants to strip it completely away so that i will completely rely on Him.-this is a very sucky time and i'm afraid of getting depressed.
